BBQ’d Zucchini Slices
Ah man, who doesn’t love BBQ season – Less dishes, fresh air etc. The best part for me, when it comes to warm season and the grill – is that the possibilities are endless. Gone are the cave-man days of just meat and potato’s (unless you’ve jumped onto the Paleo bandwagon). The simplicity in prepping veggies for the grill makes life easier as well. They don’t need much, just a pinch of tasty’s to help bring out all their natural flavours. Potential carcinogens from the open flame grilling, can be appropriately shielded by using an oil as a coating (to help protect it). This is a simple, sure fire way to enjoy a nice summer squash. Whether you are growing them yourself, raiding your neighbours garden (I do a bit of both) or hitting the local farmer’s market – be sure to bring some Zuc’s home and try this one out.
- 4 zucchini's
- 1/2 tbs olive oil
- 3-4 cracks of pink salt
- 1 tsp of pepper
- Slice zucchini’s in half length wise
- Rub with the olive oil and crack your pink salt and pepper on them.
- Lay face down on the grill on medium for approx 10 min. Should be firm but not hard with nice grill marks on them.
- Be careful not to over cook them, as zucchini is timid and can go mushy quick.
