Energy Oat Balls

Pick up the kids, get to class, get to work, get to the gym, errands to run, grocery shopping – we have all at one time left the house and forgotten to eat (especially before the dreaded grocery shop). Whoever says they haven’t is lying. I’ve done it…….. tons. It’s probably one of the worst decisions a sane person could ever make. You trick yourself into thinking that you will just grab something quick and healthy – which turns out to be inhaling a whoremonger of a cheese bun at Safeway, or an entire box of crackers. Hence the importance of on the go snacks. Spare yourself the embarrassment of pounding shameful amounts of processed garbage and take 10 minutes to make these little dudes.
Energy Oat Balls
Energy balls are an “on the rise”, grab and go snack that have become popular due to their simple preparation and advantage of being packed with tons of every day essential nutrients.   Depending on what ingredients are in them, these bad boys can be just what someone needs to snack on after a workout, or to tie you over until lunch. Pssssssst – and you don’t have to bake them.
This is a simple and quick recipe that I created for one of my clients who needed a “sweet tooth satisfier” that she could grab and eat on the run. It continues to be a great addition in 90% of my custom meal plans…

Ingredients
  1. 1 cup rolled oats (quick cooking)
  2. 1/2 cup milled flax seed
  3. 1/3 cup of honey
  4. 1/2 cup of almond butter or natural peanut butter
  5. 1 TBS vanilla
  6. 1/2 cup coconut (shredded and un-sweetend)
  7. 1/3 cup choc chips or carob chips
Instructions
  1. Place all ingredients into a bowl or food processor and mix well.
  2. Wet hands, or use rubber gloves and  roll into balls (using approximately 3/4 tbs per).
  3. Place into a container and store in your fridge for your convenience.
  4. Makes about 20, so double that recipe if you like!
Notes
  1. These guys are loaded with protein, fibre, vitamins and minerals. Do it!
