Loaded Quinoa Cookies
Who doesn’t love a friggen cookie? Anyone who says they don’t is a mysterious creature from another land. I love these ones especially because of the ingredients. I have never claimed to be a baker, so it usually takes me a month or two to come up with another sweets recipe. If it’s loaded with good ingredients, low in sugar and I can have 2 or 3 with out feeling like crap – me likey! I think my favourite part of these guys, is the added cooked quinoa. A little extra “complete” protein, minimal sugar, good fibre and healthy fats…….perfecto monster cookie that won’t go straight to my butt cheeks!

Ingredients
- 3/4 cup of quinoa flour (just make it in your blender with dry quinoa)
- 1 cup of rolled oats
- 3/4 cup of shredded unsweetened coconut
- 1/2 cup of pumpkin seeds
- 1/4 cup milled flax seed
- 1 cup of cooked and cooled quinoa
- 1/2 cup of Dark chocolate chips or raisins
- 1/2 tsp of salt
- 1/2 tsp of baking powder
- 1/2 tsp of baking soda
- 1 tsp of cinnamon
- 1/2 cup of palm sugar (coconut sugar)
- 2 eggs
- 1 tbs of vanilla
- 1/2 cup of coconut oil
- 1/3 cup of 0% plain Greek yoghurt
Instructions
- Preheat oven to 375 degrees
- Mix all of your dry ingredients together except your sugar
- Melt coconut oil and add to sugar, vanilla, eggs and yoghurt
- Mix together with the dry ingredients
- Drop onto your cookie sheet with parchment paper and flatten into the shape that you want.
- Bake for Approx 12 min (you want them soft still - they will firm as they cool)
Notes
- These babies won't rise much, and will take what ever shape you give them :) This is a hearty cookie and the little humans love them!
