Loaded Quinoa Cookies

Who doesn’t love a friggen cookie?  Anyone who says they don’t is a mysterious creature from another land.  I love these ones especially because of the ingredients. I have never claimed to be a baker, so it usually takes me a month or two to come up with another sweets recipe. If it’s loaded with good ingredients, low in sugar and I can have 2 or 3 with out feeling like crap – me likey! I think my favourite part of these guys, is the added cooked quinoa. A little extra “complete” protein, minimal sugar, good fibre and healthy fats…….perfecto monster cookie that won’t go straight to my butt cheeks!

Ingredients
  1. 3/4 cup of quinoa flour (just make it in your blender with dry quinoa)
  2. 1 cup of rolled oats
  3. 3/4 cup of shredded unsweetened coconut
  4. 1/2 cup of pumpkin seeds
  5. 1/4 cup milled flax seed
  6. 1 cup of cooked and cooled quinoa
  7. 1/2 cup of Dark chocolate chips or raisins
  8. 1/2 tsp of salt
  9. 1/2 tsp of baking powder
  10. 1/2 tsp of baking soda
  11. 1 tsp of cinnamon
  12. 1/2 cup of palm sugar (coconut sugar)
  13. 2 eggs
  14. 1 tbs of vanilla
  15. 1/2 cup of coconut oil
  16. 1/3 cup of 0% plain Greek yoghurt
Instructions
  1. Preheat oven to 375 degrees
  2. Mix all of your dry ingredients together except your sugar
  3. Melt coconut oil and add to sugar, vanilla, eggs and yoghurt
  4. Mix together with the dry ingredients
  5. Drop onto your cookie sheet with parchment paper and flatten into the shape that you want.
  6. Bake for Approx 12 min (you want them soft still - they will firm as they cool)
Notes
  1. These babies won't rise much, and will take what ever shape you give them :) This is a hearty cookie and the little humans love them!
