Cheezie Dill Nuts and Boltz

Cheeze Dill Nutz and Boltz

Cheezie Dill Nutz and Boltz

Isn’t it crazy how Christmas can throw us into an absurdly mad rush – to fill our freezers with tid bits to gobble?  It’s this socially acceptable, month long celebration of eating.  Never mind the presents – Christmas is clearly all about the grub.

Since moving back to British Columbia, I’ve had a serious awakening to garden fresh everything – and this summer it was dill.  It was EVERYWHERE.   On top of all of the fresh herbs around this place – another serious gem I discovered was 4 Oak Oil and Vinegar.  A mind blowing, infused oil and vinegar experience like no other.  You literally can put that shit on everything. Get the eff out Kraft, Litehouse, Renee’s ( not that I use that crap anyways ) – 4 Oak Oil and Vinegar is on the war path to giving kitchens in central BC an epic make over – mine being one of them.

I have literally been frothing at the chops to pump out a good “Dilly” nuts and bolts – but I had to wait until Christmas of course ( I didn’t want to stray far from the herd ).  Low and behold, I came out with a Vegan, healthy, organic, high quality snack mix that doesn’t taste like you licked an MSG block.  We live in a world where we can now purchase amazing products like Vegan “O”‘s by One Degree Organics (aka the good looking successful twin in the world of “Cheerios” ).

When these came out of the oven, I literally did a series of fist pumps – followed by an immediate panic to write down the scrambled ingredients I had flung into the batch of dressing.  This is what we called #nailedit in the world of recipe development.  A time when it is acceptable to be a self proclaimed “FIGJAM” ( F#ck I’m Good Just Ask Me ).  A moment of pure genius, when you are shampooing your hair – come up with a new recipe, throw a bunch of shit in a bowl – and it comes out perfect with no alterations.  → #nailedit ← .

This is an epic snack to leave out at Christmas – just watch for the ebola spreaders – you know, the ones who lick their fingers and dive in for another handful.  This is what happens when food is that good – a series of first world problems like no other.

xx

For the mix
  1. 1 Box of Vegan "O's" (Can use Cheerios, but please don't)
  2. 1 Box of Organic Mulit grain Squares (can use Shreddies, but please don't)
  3. 1 Box of Annies Cheddar Bunnies (Omit to make Vegan)
  4. 1 Bag of Organic Pretzles
  5. 5 Cups of Rice Sesame Snacks (little rectangle things in bulk section)
  6. 2 Boxes of Organic Rice Crackers (I used Lukes)
  7. 5 Cups of Raw Nuts (I used Almonds)
For the Sauce
  1. 1 Cup of 4 Oak Oil and Vinegar Infused Dill Olive Oil
  2. 1 Tbs of Garlic Powder
  3. 5 Tbs of Dried Dill ( I used Splendor Garden Herbs and Spices bc it's AMAZING)
  4. 1/2 Tbs of Coconut Sugar
  5. 3 Tbs of Nutritional Yeast (the cheese effect)
  6. 2.5 Tbs of Apple Cider Vinegar
  7. 2 Tbs of Dried Chives (or 1 Tbs of Onion Powder)
  8. 1 Tbs of Lemon Juice
  9. 2 Tsp of Braggs Soy Sauce (or Coconut Aminos/Tamari)
Instructions
  1. Mix all your crunchies together
  2. Do the same with your sauce mix, but in the blender
  3. Preheat oven to 250 degrees
  4. Mix your crunchies with your sauce very well. DO NOT BE LAZY with the mixing or you will have soggy pieces.
  5. Bake for 1 hr, stirring every 20 minutes.
Notes
  1. - I used my massive turkey pan plus a smaller one for this recipe
  2. - You can infuse your own regular olive oil with wads of Dill for a few days but I highly recommend finding a specialty oil place - it will change your life.
  3. - You can also use regular olive oil and just add an extra Tbs or 2 of dried dill.
