Everything Frittata
Frittata – what a name. I don’t even like it. Should be called – “I have company and I’m too lazy to fry bacon and do something that requires effort”. In any case – the name doesn’t really matter as long as your guests or family’s plates are clean by the end. This one is a company favourite because I can section it. I don’t know how many times I’ve had to host picky eaters (my arch nemesis’) and this dish is the perfect solution.
Don’t like onions you say? Fine, corner #1 – no onions. Don’t like tomato’s you say? Corner #2 – no tomato’s. Catch the scene I’m creating? It’s still in one dish – yet you can cater to everyone without wanting to bash your head off the countertop. (And there will be times). You can put whatever you like in this breakfast/brunch casserole – these are just staples that I always have kicking around in the fridge. I’ve used both a cast iron pan (which I have a love hate relationship with) and a glass-baking dish. Either way parchment paper has become my boyfriend in the kitchen – as I truly believe that scrubbing pans is my utmost hated chore next to folding a f#@king fitted sheet. Either one will do – but a little parch pape will save your sanity. Enjoy!


- 8 eggs
- 1 tsp of bragg's soy sauce
- 1 cup of left over chicken, steak or ham (if you have it)
- 1/2 cup diced red peppers
- 1/2 cup diced yellow peppers
- 1/2 cup of sliced mushrooms
- 2 cups diced spinach
- 1 cup diced tomato's
- 1/2 cup of green onion
- 1 large potato thinly sliced (really thin)
- 4 cracks of rock salt
- 1 tsp of garlic powder/spice
- 1 Tsp of pepper
- 10 thin slices of low fat mozzarella
- Preheat oven to 375 degrees
- Slice, dice, slap, chop, beat, smack, mince – your veggies and ingredients how you like them
- Line a glass baking dish or cast iron pan with parchment paper and cover the bottom with the sliced potato, salt, garlic powder/spice and pepper.
- Top with peppers, mushrooms tomato's, spinach and green onion (meat if you have it).
- Whisk eggs and whites together in a bowl with bragg's and pour over mixture.
- Top with cheese.
- Bake until you can pull a knife from the centre with no raw egg on it. Approx 45 min – 1 hr. .
