MAF Greek Salad

If you are a veg fanatic like me, you will go definitely be doing the Num Num dance for this MAF creation. I have a love for chickpeas, and a love for greek salad – but an epic hate for store bought dressings. Hydrogenated oils, xantham gum (which by the way isn’t even recognized as a word on spell check), propylene glycol, high sodium content and SUGAR. How else would it last 3 years on a shelf. Barf.

Nothing beats a home made salad, with a freshly blended dressing to bathe it in. One of my favourite things about this salad – the fact that I can make a massive bowl of it, take out a lunch size serving and dress it – leaving the rest for another day (fresh as ever). Soggy salad makes me upchuck, and sadly ends up in the garbage (not often, as I am a waste Nazi). So this is a great salad for me to make at the start of the week for my lunches. Fear not, that is the end of my rant…Behold! The MAF Greek Salad!

Ingredients
  1. Salad

  2. 6-8 cups of romaine lettuce chopped
  3. 1/2 green pepper cut in 1” pieces
  4. 1/2 red pepper cut in 1” pieces
  5. 1/2 yellow pepper cut in 1” pieces
  6. 1/2 a cucumber cut in 1" pieces
  7. 1/2 red onion cut in 1” pieces
  8. 1/2 container of cherry tomato's halved
  9. 1/2 cup of low sodium light feta cheese diced
  10. 1 cup of pitted Kalamata olives
  11. 1/2 – 1 can or soaked & dried chickpeas (depends on your love for the garbanzo!)
  12. 3 tbs of MAF Greek Dressing
  13. Dressing

  14. 3 tbs of olive oil
  15. 1 tsp of apple cider vinegar
  16. 1 lemon (juice of)
  17. 2 tsp of italian seasoning (or oregano, rosemary and thyme all together)
  18. 1/2 tbs of Dijon Mustard
  19. 2 cracks of pink salt
  20. 1 tsp of pepper
  21. 1/2 tbs of honey/pure palm sugar or agave
Instructions
  1. If you have not invested in a mini food processor or hand blender (both are below $20), YOU MUST! Nothing emulsifies (creamy-izes) a dressing like one of these babies... but if you haven't accumulated one of the mentioned above, and old pickle jar will do, to commence vigorous shaking.
  2. Wash all your veggies thoroughly, and diced into the specified size (you want to be able to fit them in your kisser)
  3. Place into a large bowl.
  4. Toss everything with 3 tbs of your newly created MAF (My Awesome Foods) Greek Dressing, and BOOM!
  5. Do this at least 20 minutes prior to serving as it gives your rainbow of beauty a bit of time to marinate and enhance the ultimate flavour.
