The Ultimate Appy

Epic Bruschetta

All hail the mighty Tomato Bruschetta!! Onion, fresh tomato’s, garlic and fresh basil……erm…YUM! I am a forever lover of this appy, for the simple fact that I can throw it on my salad the next day (if there is any left).

I despised tomato’s for the longest time, even a remaining slimy seed left on something would make me gag. Until I started to realize how healthy they are for us (via the repetitive notions from my husband). Anti cancer, rich in vitamins, and basically an all around disease preventer (so to speak) – paired with the antioxidant providing garlic and onion….Boom. It totally changed my attitude. It didn’t change the tastebuds, but helped me be less resistant to trying the previously vile little buggers. I started with doing a red pepper bruschetta with “some tomato’s”, and slowly but surely via sneaking more in – I became a fan.

Nobody is hiding the fact that your mouth tastes like a toilet bowl, shortly there after consuming a feast on bruschetta – but seriously….who cares. Not me, especially after I’ve had a dance party – in my mouth. Yay for tomato’s and my husband for helping bring me to the bright side of that world. I give you:

Ingredients
  1. 1 vine ripened tomato
  2. 1 container of cherry tomato's
  3. 3-5 cloves of garlic
  4. 1/2 of a red onion
  5. 3/4 cup of fresh basil (minced)
  6. 1/2 Tbs of Olive oil
  7. 1 Tbs of Balsamic Vinegar
  8. 2 cracks of rock salt
  9. 1 Tsp of Pepper
Instructions
  1. Turn up the tunes!
  2. Mince your garlic, basil and onion
  3. Toss all together with salt, pepper, oil and vin.
  4. Let sit in the fridge for 30 min before serving.
  5. (if making way ahead of time, reserve oil and vinegar and toss 30 min before serving)
  6. Serve with thin sliced baguette or rice crackers
  7. ENJOY!!!
