The Only Way To Cook Quinoa

Quinoa!

I’ve had tons of messages regarding how to cook it, why it tastes like dirt, why it’s slimy, and why it’s so great. Here are 10 great facts about Quinoa followed by a recipe for the Perfect Quinoa.

  • It’s packed with protein (14 g per 1/2 cup uncooked)
  • It’s an epic rice replacement
  • It’s gluten free (if your celiac or on the gluten free train)
  • It’s Packed with magnesium (promotes bone health, fights diabetes etc)
  • It’s considered a complete protein, meaning it holds all the essential amino acids we need (like meat protein)….rare for any plant
  • It’s high in fibre (5 grams per 1 cup cooked = 21% recommended amount)
  • It’s low in fat and relatively low in calories
  • It’s high in antioxidants
  • You can bake with it, have it with stir-fry, make burgers with it, grind it into flour, the list is endless
  • It tastes AMAZING (if you follow my lead)

One of the biggest issues people have with Quinoa – is when it is purchased “un-rinsed”. Quinoa has a bitter coating on it that needs to be soaked and rinsed off. It’s time consuming and a major pain in the ass (don’t believe me…try it). This is the main reason why it would taste awful and possibly cause you tummy pains.  Find yourself an organic brand that is “pre-rinsed” -Costco carries TruRoots and it’s a great price.

 

Coconut Toasted Quinoa

Ingredients
  1. 1 1/2 cups dry Quinoa
  2. 3 cups of Water
  3. 1/2 Tbs of Coconut Oil
  4. 1 Clove of Garlic Minced
  5. 1/3 of a Red Onion Minced (optional)
  6. 1tsp of garlic powder
  7. 1/2 tsp of pepper
Instructions
  1. Melt your oil in a frying pan (that has a lid) on high.
  2. Stir in minced garlic and onion until soft.
  3. Add your dry quinoa and "toast" in the oil mixture for a few minutes, stirring constantly until it starts to "pop"
  4. Add water and place lid on pan.
  5. Boil, then turn to low and simmer for 20 minutes.
  6. When the quinoa is sticking to the bottom, turn it off and leave the lid on - It will finish steaming itself/
