Wild Rice and Chicken Casserole
One dish meals…..Um – Yes Please. Every other on the go family out there agrees with me and I know it. Nothing beats throwing a bunch of ingredients into one dish and leaving it be until the timer goes off. Less stress, less dishes, happy cook.
This is the definition of pure genius ( ok ok I know I say that a lot). I have a bit of an inner lazy bugger when it comes to dinner some times. We all do. I love to freeze stuff and I love casseroles – Especially this one. It’s to the brim with flavour and ridiculous easy to put together. I’ve even skipped the entire chicken/marinade and just roasted an entire chicken before – having this as a side dish – but I will save that for another story time. My tiny human hasn’t even joined any sports yet – so I suppose I’d better get a move on creating some more of these one-pot wonders. I recently had this as a meal option for one of my North American Clean Eating Challenges – and out of 200 people nobody died but rather nattering in my ear rave reviews (toot toot) (that was me tooting my horn- my own horn). So please, by all means – ENJOY!
- 2 boneless skinless chicken breasts
- 2 cups of wild rice/quinoa blend (or 1 cup rice, 1 cup quinoa)
- Appropriate cooking instruction amount of water (will be on your rice label)
- 3/4 cup of pesto (preferably home made)
- 1 onion diced
- 2 cups of cherry tomato's
- 4 cups of broccoli florets
- 2 tbs of apple cider vinegar
- 1/4 cup of olive oil
- 1 tbs of braggs soy sauce
- 1 tsp of fish sauce
- 1 tbs of dijon mustard
- 1/2 tbs of Worcestershire
- Mix your marinade in a large bowl and cut your chicken breast into 1” pieces. Marinade your chicken for a minimum of 2 hrs prior to cooking.
- Preheat oven or crock pot to 375 degrees.
- Add chicken to the bottom of a large glass baking dish (or crock pot).
- Mix your pesto with your wild rice and it along with the onions, tomato's and broccoli to the dish.
- Finish by topping with the amount of water provided by your cooking instructions on your bag of wild rice/quinoa.
- Bake in the oven for approx 1 hr or until rice is tender :) Remember that wild rice is always a bit chewier than normal. Enjoy!
